
After a few hours of sleep, some coffee and toast, and a hot shower, I feel MUCH better!
I think I have the energy to make a batch of salsa from all the tomatoes sitting on the kitchen counter. With the frost warning for last night, my son picked every one that was ripe or almost ripe.
I've never made salsa before, so this will be an interesting experiment. I've looked up some recipes, so I'll let you know how it turns out.

I too picked all of mine. I have never made salsa either, but it is something I would like to learn how to make. I am including an awesome recipe for homemade sauce.
Ingredients:
-3 tablespoons olive oil
-1/4 cup finely chopped onion
-2-3 cloves of chopped garlic
-3 pounds fresh peeled tomatoes cut into quarters (I score and "x" in the bottom of mine and then drop them into boiling water until the skins come lose. Then, I peel them).
-1 teaspoon brown sugar
-8 large basil leaves, chopped (more or less as desired to taste)
-1 tablespoon of roughly chopped flat leaf parsley (more or less as desired to taste)
-3/4 teaspoon salt
-pinch of baking soda
-fresh ground black pepper to taste
Directions:
-Heat olive oil in pan
_add onion and sauté until transparent
-add garlic and cook until just lightly brown
-add tomatoes, brown sugar, salt, basil, parsley, baking soda, and brown sugar
-cook over medium heat, stirring occasionally, with a wooden spoon, until the sauce thicken, about 20 minutes, or until desired consistency
-you can use immediately, freeze, or can
-will last a week in the fridge and four months in freezer
